What does Roman Nejedlý, a roaster at Fiftybeans, have to say about this coffee?
Colombia 50%
The Colombian portion of Sebastian’s blend undergoes a distinctive fermentation process. After the parchment is removed, the coffee cherries are first left to oxidize in barrels for 48 hours; then, dried strawberries are added, and they ferment for another 48 hours in a sealed environment. The coffee is then dried for 10 to 14 days on patios, where it is turned regularly. After drying, the parchment is removed at the dry mill, the coffee is sorted, and prepared for export.
Ethiopia 50%
The Ethiopian component from Yirgacheffe is processed using the traditional fully washed method. The cherries are first soaked, peeled, and fermented in tanks, where any remaining pulp is removed. The coffee is then washed with clean water and dried for several days on African drying beds. This process helps it retain a clean and fresh flavor profile.
Good to know: When brewing filter coffee, always use beans no earlier than 7 days after the roast date. After opening the package for the first time, let it air out for at least 4 hours before brewing. This will prevent unwanted bitter notes in the flavor.
